Caespes is a Latin word that refers to the soil or, more broadly, the land in which these vines are planted. While other producers age Timorasso in wood, Ezio only uses stainless steel to preserve the fruit purity. Grapes are gently pressed and fermented in stainless steel tanks. This is an explosive wine with the right balance between fruit and minerality. The Timorasso is the hidden gem of Northern Italy, an exquisite grape for an elegant palate.
