Paolo Petrilli is famous for his tomatoes, regarded as some of the best in Italy, but he's clearly a dab hand at making wine too. From Puglia this is a blend based on the local Nero di Troia grape that offers up lots of cherry fruit, wild herbs and dried floral notes.

Caespes is a Latin word that refers to the soil or, more broadly, the land in which these vines are planted. While other producers age Timorasso in wood, Ezio only uses stainless steel to preserve the fruit purity. Grapes are gently pressed and fermented in stainless steel tanks. This is an explosive wine with the right balance between fruit and minerality. The Timorasso is the hidden gem of Northern Italy, an exquisite grape for an elegant palate.

Grown on calcareous clay soil, the vineyards are situated at 300 meters from the Cantabrian sea. It's made in very small quantities due to the rarity of the red Hondarrabi Beltz grape, a relative of Cabernet Franc, that gives the colour. The fresh red cherry and cranberry are the perfect match for spring nights.
